Why Eat A Rainbow?

Often you will hear nutritionist say, “eat a rainbow”, because colourful foods such as vegetables and fruits contain pigmented phytochemicals which offer many health benefits. The bright yellow yolk of an egg also falls into this category because it contains lutein and zeazanthin (known as macular vitamins) both of which are now proven to help ocular health especially the macular region of the retina.

Sweet and tender fresh green peas also contain one of the macular vitamins, lutein. Peas are legumes so they have many of the nutritional qualities of beans. They are high in fibre, a good source of protein plus folate, iron and zinc. Peas should be part of any macular degeneration diet or nutritional programme containing these essential eye vitamins.
